To cook enoki, first trim off the bottom of the cluster and separate the stalks. Rinse them under cold water. Enoki can then be sautéed with garlic and soy sauce for about 5 minutes or added to soups and hot pots just a few minutes before serving, as they cook quickly. Enoki can also be roasted with oil and seasonings at 375°F (190°C) for 10-15 minutes until crisp.
