TatSoi
Also known as: Rosette bok choy, Spoon mustard
TatSoi is an Asian variety of field mustard and a close relative of the more popular Bok Choy. It is grown for its edible greens that have a soft, creamy texture and a distinct taste. The name of the plant is sort of symbolic. In Cantonese, it means "drooping vegetable," nicely describing the growth habit of the plant's spoon-shaped foliage.

Water: Originating from Asia's damp regions, tatSoi thrives in moist soil and high humidity. Watering twice a week mimics its native conditions. As an herbaceous plant, it benefits from rainwater, which supports its hydration needs and promotes vigorous growth.
Fertilize: Brassicas like tatSoi have high nutrient demands, especially for nitrogen, which should be applied about four times more than phosphorous and potassium. Fall manure or compost applications and spring general-purpose fertilizers are recommended. Fertilizer application methods vary by location and climate, with lime-containing options preferred.
Pruning: TatSoi features dark green, spoon-shaped leaves and thrives with regular pruning. Remove yellowing leaves and thin crowded areas in early to late spring to improve air circulation and promote healthy foliage. Use clean, sharp tools to prevent disease.
Propagation: TatSoi features smooth, spoon-shaped leaves with a mustard-like flavor. For propagation, use fresh seeds sown 1.3 cm (0.5 in) deep in a well-drained seedbed or tray. Maintain consistent moisture, provide adequate light, and thin seedlings to support healthy growth during transplanting.
